The deliciousness of summer - fresh blackberries just harvested from the vine and kissed by the heat of August.

Just last week, TSLL's Intro to French Cooking class opened for enrollment, and these blackberry tarts shown above demonstrate how both seasonal, and pairing with amplifying taste partners (apples and vanilla in this case), can create a delicious dessert without much time or fuss. In the lesson focusing on desserts in the course, this is one of the creations you will learn how to make, along with the tools needed to create your pastry and its final presentation with ease. Truly, we keep it simple, because that is how I love to cook and what keeps me wanting to step back into my kitchen because I love to eat delicious food, but I don't want to live standing next to the stove. ;)

Enrollees have begun to watch the course, and feedback so far as been a celebration of enjoyment which is music to my ears. Cooking and meal planning can be simple and it can be fun, and it need not be time-consuming. With the right supports - helpful tools, well-stocked épicerie and seasonal produce know-how, paired with the skills to work your magic with your chosen ingredients - you can make a meal in no time and be savoring deliciousness without stress or exhaustion.

I have been wanting to bring this class to you for a couple of years now, and am so tickled to be able to bring all of the helpful tips and know-how into an organized place and presentation that you can then access on your own time, and have as reference when you need to refresh on any particular subject - i.e. winter's offerings, the simple Le Cordon Bleu salmon recipe, how to poach, what are the many ways of making a sauce from the food I will pair it with, and so on.
